  1. Everyone else's answers are pretty good, but they have all skipped the most important step.  Soak your skirt steak overnight in budweiser.  I am not joking.  It naturally tenderizes the meat and the alcohol cooks out.  I also like to score the meat with a fillet knife, brush a little evoo on it, and add the seasonings on top of that.  If you cook them on a grill it only takes about 6-8 minutes.


  2. 1 lb flank or skirt steak

    two onions sliced

    2 red bell peppers slices

    1 lb sliced mushrooms if desired

    marinade:

    juice of one lime

    1/4 cup oil

    1 jalapeno pepper chopped

    2 cloves garlic

    1 teaspoon cumin

    1 teaspoon oregano

    combine ingresiants for marinade in a plastic zip top bag and marinate steak overnight.

    prepare a grill for high heat grilling. grill steak over high heat for about 5 or 6 minutes checking to make sure it is not burning. turn steak and cook to desired temperature.4 or 5 minutes for med rare, 6 to 7 minutes more for medium. 8 to 10 minutes more for med well

    remove steak and cover with foil.

    heat 2 tablespoons of oil till hot in a heavy skillet and add onion, peppers and mushrooms (if using)

    cook till veggies are tender about 5 minutes

    meanwhile slice steak thinly against the grain (it will be short ways) place meat slices directly on top of veggies in skillet. bring to table

    serve with tortillas and condiments

  3. The secret to good fajitas is the marinade.

    for a beginner start with preseasoned

    go to the store and buy already marinated meats, onion, bell pepper, mushrooms and garlic

    cut them up, fry them up and eat them up

  4. Beef Fajitas -- You can buy Beef Fajitas from your grocery store that is all ready marinated, you can also buy Fajita Rub (seasonings) or a jar of marinade. They are all great.

    INGREDIENTS

    1/4 cup vegetable oil

    1/4 cup lemon juice

    3 garlic cloves, minced

    1 1/2 teaspoons grated lemon peel

    1/4 teaspoon chili powder

    1/4 teaspoon pepper

    3/4 pound beef flank steak, cut into thin strips

    3 green onions, thinly sliced

    4 (8 inch) flour tortillas

    Salsa



    DIRECTIONS

    In a bowl, combine the oil, lemon juice, garlic, lemon peel, chili powder and pepper. Place half in a resealable plastic bag; cover and refrigerate remaining marinade. Add meat to bag. Seal and turn to coat; refrigerate for 4-8 hours.

    Drain and discard marinade. In a skillet, heat reserved marinade. Add meat and green onions. Cook and stir until meat reaches desired doneness. Using a slotted spoon, place about 1/2 cup meat mixture down the center of each tortilla. Top with salsa if desired. Fold sides over meat mixture.

    NOTE - Take onions, green and red peppers and slice them up. Saute in pan with some olive oil until crisp-tender. Yummers!!  

  5. STEAK FAJITAS  

    1 flank steak, about 1 to 1 1/2 lb.

    1/4 c. lime juice

    1/4 c. olive oil

    2 cloves garlic, crushed

    1 tbsp. vegetable oil

    4 flour tortillas (10 inch size), warmed

    4 oz. pkg. shredded cheddar cheese

    1 c. shredded lettuce

    1 tomato, chopped

    1 sm. green bell pepper, julienned

    2 green onions, sliced

    2 avocados, seeded, peeled and sliced

    Sour cream

    Bottled salsa

    Slice steak into 1/2 inch strips. Mix lime juice, olive oil and garlic in medium bowl. Add meat; refrigerate at least 1 hour or overnight. Heat oil in heavy skillet. Fry meat quickly over medium - high heat until browned; remove from heat. Fill each tortilla with about 3/4 cup meat. Divide cheese, lettuce, tomato, green pepper, green onions and avocado slices among each tortilla. Serve with sour cream and salsa.

    Makes 4 fajitas.
