  1. Jamaican Jerk seasoning principally relies upon two items: Jamaican Pimento, called allspice, and Scotch bonnet peppers.

    Other ingredients include cloves, cinnamon, scallions, nutmeg, thyme, garlic, which is mixed together to form a marinade which is rubbed onto the meat.

  7. A friend gave me this recipe for homemade jerk marinade that might work for you.

    Marinade Ingredients:

    2 tsp. ground Jamaican pimento (allspice)

    ½ tsp grated nutmeg

    ½ tsp mace

    1 tsp salt

    1 tsp brown sugar

    2 tsp thyme

    1 tsp black pepper

    1½ cups escallion

    2 onions

    2 scotch bonnet peppers

    2 tbsp cooking oil

    Blend all the ingredients together in a blender or food processor. Store extra marinade in an airtight container in the refrigerator.

    To use, pour mixture on to chicken or pork that has been seasoned with finely chopped garlic. Leave to marinate for about 2 hours.

    Put chicken on hot barbecue grill over white coals with the skin side down. Keep turning often to prevent chicken from getting too dark. Allow to cook slowly. Chop into small pieces. Serve with additional jerk sauce.

    but do you want authentic jerk (jamacian cuisine).....

    if so, then you should google the seasonings that are required b/c authenitc jerk is mostly seasoning and rarely has sauce... americans made jerk into a sauce...
