How do you make the flexible pastry in a jamaican pattie ? Mine turn out like pie crust?

The patties I buy in the restraunts have a soft and flexible feel to them. When i follow the online recipes (and i have followed a few) the pastry is more like a pie crist , pretty solid .How do i get that soft flexible pastry ?Please only answer if you know what im talking about

  3. simply use margarine or butter( unless u are heart concious. Also it will be a good idea if you use all purpose flour instead of pastry flour ( cause pastries made using the flour tastes dry and can crack, may be it is due to less protein content).

  4. I am a former chef and worked in Jamaica, and have a friend here in Toronto Canada that owns and operates a Jamaican Bakery and Food store.

    They use margarine instead of shortening, and not as must of it as regular pie dough, milk and a dash of turmeric for colour, cut the amount of fat in your dough by 1/3.

  5. Yes, I do know what you are talking about. I recently did a lot of research to try and make patties for a friend. You want to make sure you're using all-purpose flour (not bread or pastry flour) and use lard which will make the pastry flakier and lighter. Try not to overhandle the dough or you'll make it tough. Make sure the lard is COLD when you cut it in. Also make sure the water you use is ice-cold.

    I was semi-satisfied with the batch of patties I made. An important side note- I heard somewhere that the patties are better the next day. I didn't believe that- I thought, "How can a pastry be better reheated than fresh out of the oven?" Evidently, it's true. I sent some home with my friend, and he said the next day the pastry was "the way it's supposed to be." He said it was much better than the day before.

  6. My Mum makes patties all the time cause they are cheap and easy to do at home instead of buying them!
