How do you make the garlic spread served at many Labanese resturants?

We usually get it at LaShish here in the Detroit area untill they closed. I have been searching online and have found a few different recipies one with yougurt and one made with just garlic, I'm not sure on which one it is. They serve it with pita bread and it is usually on some of the wraps like Shishtawook. Any insight on this would be helpfull. Thanks!

  1. Slice the top off a whole bulb of Garlic. Salt, wrap in foil and bake at 350 until it is soft.

    let cool, squeeze out the garlic and mix well with sour cream. If you are looking for something more low-fat you can line a colander with a coffee filter and dump in a container of low fat yogurt. cover and let sit overnight, use as you would sour cream

We use to love this it at LaShish also.  This is the way I have been making it and my friends and family can't tell the difference.  You only need 3 ingredients garlic, butter, and salt.  Process garlic in food processor, add butter and salt.  You have to adjust the ingredients to your taste.  I also add parsley (with garlic) and black pepper for a little kick.

  4. This is very simple, it's just garlic, good quality olive oil & salt.

    That's it! The trick is using an ice cold marble pestle and mortar and giving it a good mash, this somehow creates the unique texture. Try it!
