How do you make the name "Barshatzky" plural?

Normally, a word ending in "zky" would be made plural by changing it to "zkies": correct? But with a name, is it kosher to change the spelling that way? Serious answers, please. This is for a legal document so it's important that it be correct. I'd appreciate any help.

you never change a name in any way shape or form.  You only add to it.
