  1. depends, what kind of ham? that wet kind thats in like water or the dry kind from the deli? if its the wet kind, a roll with mayo and pickles, also good with the roll toasted. if its the dry kind, bread with mayo and mustard and lettuce. or make a ham and cheese melt.

    Servings: Serves 4.

    Ingredients

    1 cup finely grated Gruyère plus 2 tablespoons for sprinkling the sandwiches

    2 tablespoons sour cream

    3/4 teaspoon Dijon-style mustard

    3/4 teaspoon kirsch

    8 slices of homemade-type white bread

    4 thin slices of cooked ham

    1/2 stick (1/4 cup) unsalted butter, softened

    Preparation

    In a bowl stir together 1 cup Gruyère, the sour cream, the mustard, and the kirsch and spread 1 tablespoon of the mixture evenly over each bread slice. Arrange the ham on 4 of the bread slices and top it with the remaining bread slices, spread side down.

    Remove the crusts with a sharp knife and spread the tops of the sandwiches lightly with 2 tablespoons of the butter. Invert the sandwiches into a large skillet, spread the tops with the remaining 2 tablespoons butter, and grill the sandwiches over moderately high heat, turning them once, for 6 to 8 minutes, or until they are golden brown on both sides.

    Transfer the sandwiches with a metal spatula to a baking sheet, sprinkling them with the remaining 2 tablespoons Gruyère, and broil them under a preheated broiler about 4 inches from the heat for 2 to 3 minutes, or until the Gruyère is just melted.

    Servings: Makes 2 servings.

    Ingredients

    4 (1/3-inch-thick) slices egg bread

    2 1/2 tablespoons whole grain Dijon mustard, divided

    4 thin slices aged white cheddar cheese (cut to size of bread), divided

    4 thin slices smoked turkey

    4 thin slices smoked ham

    4 leaves mustard greens (trimmed to size of bread)

    2 large eggs

    3 tablespoons butter

    Preparation

    Place 2 bread slices on work surface. Spread each with 1 tablespoon mustard. Top each with 1 cheese slice, 2 turkey slices, 2 ham slices, 2 leaves mustard greens, another cheese slice, and bread.

    Beat eggs and remaining 1/2 tablespoon mustard in pie dish to blend. Melt butter in large skillet over medium-low heat. Dip both sides of sandwiches into egg mixture. Place in skillet. Cover and cook until bottoms are golden, about 5 minutes. Turn sandwiches over. Cover; cook until golden and cheese is melted, about 4 minutes longer. Transfer sandwiches to plates; cut into quarters.

    GRILLED TURKEY CUBAN SANDWICHES

    Servings: Makes 6.

    If you're making just one or two sandwiches at a time, you can cook them in a skillet and top them with another skillet weighted with cans.

    1 cup mayonnaise, divided

    1 tablespoon hot chili sauce

    1/3 cup (packed) finely chopped fresh mint

    2 tablespoons fresh lime juice

    2 tablespoons minced shallot

    1 teaspoon sugar

    1 teaspoon ground cumin

    1 1-pound loaf ciabatta bread, ends trimmed, bread cut crosswise into 6 pieces (each about 5x3 inches), each halved horizontally

    12 deli slices Swiss cheese

    1 pound thinly sliced Black Forest ham

    6 1/4-inch-thick slices cooked turkey breast

    6 tablespoons (about) butter

    Preparation

    Mix 1/2 cup mayonnaise and chili sauce in small bowl. Mix 1/2 cup mayonnaise, mint, and next 4 ingredients in another small bowl.

    Spread chili mayonnaise over cut sides of bread. Top each bottom half of bread with 1 cheese slice, ham slices, and 1 turkey slice. Sprinkle turkey with salt and pepper. Spoon mint mayonnaise over turkey. Top with remaining cheese and top halves of bread.

    Working in batches, melt 2 tablespoons butter in large griddle over medium heat. Add 3 sandwiches; top with piece of foil.

    Place 13x9x2-inch metal pan atop sandwiches. Fill pan with 6 to 8 pounds of canned goods and cook until bread is golden brown, about 4 minutes. Remove pan with weights and foil. Transfer sandwiches to work surface. Melt 1 tablespoon butter in griddle.

    Turn sandwiches over onto griddle. Replace foil and pan with weights. Continue cooking until cheese melts and sandwiches are golden brown on second side, about 4 minutes. Repeat with remaining butter and sandwiches. Cut in half; serve.
