How do you make your clear soup?

I am looking for a recipe to make clear soup, in the US it is served at the japanese resturaunts it is clear and has has mushrooms and other vegetables floating in it! its so good!

  1. It is called Osui-mono, not chicken or pork or beef broth but is Dashi broth based by dried shredded bonito as Katsuo-bushi, dried sea weed as Konbu and soy sauce as Shoyu ..

It's basically a broth.  I've seen (tasted) it made from chicken stock, beef stock, and pork stock.  But mostly it's made from fish flakes or shrimp.  You can buy shaved bonita flakes, either float them in a pot of water or put them in a tea ball or wrap them in cheese cloth, bring the water to a boil.  Toss in a piece of dried kelp.  Turn off the fire and let it steep.  Taste periodically and when it tastes the way you like it, use it.  I like mine real strong so I use a LOT of fish flakes and kelp.  But you can also just buy the "dashi" (fish broth) in powder form, then it's just add a teaspoon (or whatever, says on the label) to boiling water and presto!  Instand fish broth.  Then toss in whatever you want--seaweed, tofu, mushrooms, a sliver of lemon rind, etc.
