  1. The two answers before me are good, especially the 2nd one.  If you don't want to make them from scratch, there is a good box mix from Dr. Oetker.  They're called Kokos Makronen.

    I'll try to translate that into English; sorry if it's not going to be perfect:

    Separate the egg and yolk of 4 eggs from each other; only use the egg white. Stir with a kitchen machine until it becomes stiff.

    Add 200 grams of sugar and 200 grams of coconut flakes, one after the other, stirring slowly with a wooden spoon.

    Now start heating the oven to 150 Celsius (300 Fahrenheit). [my opinion: it's better you choose a little less]

    And now we come to the point I really don't know: Do you have these white round things made of rice flour to put under the dough that are called "Oblate" in German? The same that Catholics use in church services?

    If not, don't worry. Just leave them away and put teaspoon portions of the dough on baking paper. Mind you keep the distance between them; they expand during the baking process.

    Bake for about 15 minutes.

    Mind that the Plätzchen (now called Kokosmakronen) will become very dry shortly after baking and should be stored in a plastic or metal box for two weeks where they will soften, and they'll just be ready for christmas.

    There's one version not shown in the recipe I linked to, but kids like it: When the Makronen are ready, melt some chocolate in a pot, and dip either the bottom or the top of the cookies into it. That's really a kids' favorite.
