How do you name it? ?

Two week ago I spent ten days in England. I ate something like a square biscuit made with short pastry, caramel and milk chocolate, how do you name it? and do you have a recipe?

  2. Its millionaires shortbread.  A shortbread base, with some caramel, topped off with chocolate.  It's made in a large tray, and then cut into squares.

  3. Caramel shortbread, also known as Caramel slice, Millionaires shortbread or Millionaires slice.

    Ingredients  

    For the base:

    225g (8oz) butter shortbread biscuits

    25g (1oz) butter, melted

    For the filling:

    150g (5 ½oz) butter

    150g (5½ oz) soft brown sugar

    397g can Carnation Condensed Milk

    55g (2oz) stem ginger, chopped (optional)  

    For the topping:

    115g (4oz) dark chocolate, melted

    115g (4oz) white chocolate, melted

    2tsp vegetable oil  

    You will also need:

    A square brownie tin, 20cm (8”), greased and base-lined.

    To make the base, process the biscuits until they are like crumbs then stir in the melted butter. Spoon this mixture into the tin and, very lightly, press to make an even layer. Chill for 20 minutes.  

    Place the butter and the sugar in a nonstick saucepan over a low heat, stirring until the butter melts and the sugar dissolves.  Add the condensed milk and bring gently to the boil, stirring continuously to make a golden caramel. Spoon the caramel over the crumb base, to cover. Leave to chill for 20 minutes.  

    Sprinkle the chopped ginger over the caramel base.   Stir half of the vegetable oil into each bowl of melted chocolate. Pour the dark chocolate over the caramel, spreading it out to the edges. Repeat with the white chocolate, but swirl slightly to create a pattern.

    Leave aside to set. When the chocolate has hardened a little, but before it has set hard, cut into slices, and enjoy with a cup of coffee.

    Ingredients

    For the base

    225g plain flour

    100g caster sugar

    225g Butter

    100g Semolina

    For the topping

    175g Butter

    175g caster sugar

    4 tbsp golden syrup

    1 x 397g can condensed milk

    200g plain chocolate, broken into pieces

    Method 1. Set the oven to 160C/gas2. Lightly grease a 20cm x 33cm oblong/ Swiss roll tin.

    2. Place all the ingredients for the base into a food processor and whizz together until they form a smooth dough (if preferred this can be done by hand in a bowl).

    3. Press the mixture into the base of the Swiss roll tin and prick with a fork. Bake for about 30-40 minutes until golden and firm. Set aside to cool.

    4. To make the topping, place the butter, sugar, syrup and condensed milk into a saucepan and stir over a low heat until the butter has melted.

    5. Bubble the mixture gently for five to eight minutes, stirring all the time until thick and fudge-like. Pour over the cold shortbread in an even layer. Leave to cool.

    6. Melt the chocolate in a bowl over a pan of simmering water.

    7. Pour the chocolate over the toffee and leave to set. Cut into small squares and store in an airtight tin.
