How do you play Defense in NHL 08? How do you take the puck from the opponent?

The poke check rarely works and the checking in the game might as well not exist. There is no pinning on the boards or forechecking and your AI teammates never seem to be able to pick up on the man at the other post to save their lives...

How do you play defense in this game, or is it just not possible. I have the one for the Xbox 360.

With the right analog stick to check, to poke check R1 with the right analog stick. Works fine for me everytime.

Defense is a bit of a joke in this game.  Nevertheless, you're still able to pull out a good defensive game once in a blue moon.  With the right players, you can pin them to the boards, but its with the right timing, positioning and again, player.  Otherwise, they will keep cycling the puck and take 1 timers from the slot.  Try not to play as the defensemen, but rather the forward and stay up top to cut away the passing lanes.  That will force them down low and hopefully they take a weak shot where your goalie can cover up the puck so you can have your best center out there to take the draw.  Play disciplined and don't go chasing the puck handler with the closest player.
