Well technically it is geia sou (γεια σου) or geia sas (γεια σας), as the word gia (για) generally means 'for' or 'about'.  Both mean "health to you", the former being informal and the latter formal or used when speaking to more than one person.

The γεια is pronounced kind of like the "ya" sound in "yawn".  You can think of σου  sounding like the name 'Sue', and σας sounding like the word "sauce".
