How do you prune sunflowers?

Question

When my sunflowers are wilting, do I cut off the heads and if so, will another grow in it's place eventually or will I have to replant new seeds for next year? What is the best way to cut the stems and still keep the stalk striving?

my sunflower plant, only has one head, she was so happy at first but now she wants to look only at the ground. is there something wrong with her what should i do?
