.On your remote control there's a  button SP/LP or it could also include the letters EP. SP (Short Play), LP (Long Play), EP(Extra Play)  . This will select the mode, you desire for recording onto a blank VHS tape. On certain type's of VCR's the recording mode selector can also be found on the front of the VCR.

Same as you would any tape. The VHS machine will recognise the speed it has been recorded at after you have recorded it.

HOWEVER you must note that every manufacturer of every extended playing VHS recorder offers the following disclaimer:

Any VHS video that has been recorded on this machine will not necessarily play on another extended playing VHS recorder.
