Question:

How do you "can" figs?

I really just want to save them so I can eat them later...like peaches. Except I freeze peaches and I don't think that I've ever heard of anyone freezing figs. I looked up how you would can them and it's all under "preserving" and always calls for so much sugar. Usually a cup of sugar per cup of figs. Is there any way to save them for later without using all that sugar?

  1. This recipe calls for 1/2 sugar to fig. http://allrecipes.com/Recipe/Fig-Preserv...

You can cut this recipe even more and it would be fine.  Dehydrated cane syrup can be replaced for sugar in any recipe at the same amount and actually has less sugar than sugar.

Some sugar is necessary for figs unfortunately - its the preserving ingredient.

Figs can also be dried without any sugar.

  2. I'm making some fig preserves from the tree out in back!

    I'd recommend it!

  3. you could dry them in the oven- really slowly on low- probably need to keep them in over night. Or you could put them into some kind of alcohol- amaretto or brandy work well with figs, but may need to get a little moisture out first. Figs in amaretto are lovely with marscaopone and the ones in the shops last for years
