I need to "fold in" whip cream with a sauce that I made. What the heck does that mean?!!! How do I do it?

  2. you would put the whip cream in the middle of the sauce and with a spatula, you would kind of fold the sauce over the whip cream. You wouldnt stir, you fold so the cream stays fluffy. Literally, fold the sauce over the cream. The best thing to help you is a spatula!

  3. Place you spatula into the centre of the mix and cut to the outside an give the bowl a 1/4 turn and fold over and repeat until it is mixed through.

    As a rule you do it gently so you don't knock the airation out of the cream.

  4. Usually when you are asked to fold in an ingredient, it is so you can keep the volume of whatever you are making.  To fold is to GENTLY  add the ingredient and incorporate using a under-over motion instead of stirring which is a more round and round motion.

    For the official definition:

    Fold: To mix, using a motion beginning vertically down through the mixture, continuing across the bottom of the bowl and ending with an upward and over movement

Whipped cream by definition has air bubbles in it, which you want to be able to maintain the fluffiness while it's in the sauce you're making.  So gently dump the whipped cream on top of the rest of the ingredients, grab a mixing spoon and very gently mix the two of them, usually holding your spoon as parallel as possible with the countertop.  Don't overmix or you lose the lightness of the whipped cream.

It means GENTLY adding the whipped cream to your sauce and you do this by using a large rubber spatula and lift the cream up and over your sauce like making a big circle and then bring your spatula around and UNDER yor sauce. It takes only a few strokes to do this. DO NOT STIR which is rapid verticle swirling strokes.
