Question:

How do you roast Garbanzo (Chickpeas)?

I saw a recipe at http://allrecipes.com/Recipe/Roasted-Chickpeas/Detail.aspx

and would like to make it, but start out with Bagged, dried garbanzo beans and soak them, then cook them in water and cool them; instead of using the canned kind before starting the recipe.

In the recipe, they use oil first, then bake it, but some reviewers that made it, say its better adding oil afterwards. Has that been your experience?

I was thinking of not adding oil at all. Will the spices stick OK?

Also, I was thinking of using cajun spices. Need your advice.

  1. I've done this without using oil. The trick is to toss the chickpeas with the spices while the peas are still wet.

    Another method to try: cook the peas in seasoned water. I like to use garlic or chipotle flavored bouillon cubes in the cooking water, then I don't have to season at all once they are cooked.

    I've found you can't store the roasted peas in a zip-lock baggie - they get soft and chewy.
