How do you salt cure a ham?

we kill our own pig and I want to know how to salt cure the ham and the bacon...

  1. Rub down with rock salt. Dry age at about 50 degrees farenheight for one month. Cut off mold and whalla!


  2. I have done curing, but is a slow process you need saltpetre for the brining and it does take time.

    My advice, do what I did, go to your local butcher, they will cure, and cook/smoke it for you. It's cheap and the results are guaranteed.
