Isn't it Watashi wa watashi no ringo o tabemashita?

It sounds so redundant. Do I have correct grammar?

Watashi no, means the apple belongs to you.

but we omit 'watashi' in daily conv.

its gonna be like

watashi wa ringo wo tabeta

watashi no ringo wo tabeta

or even

ringo wo tabeta

if listener already know about your apple or something.

Almost.

"Watashi no ringo wo tabemashita" is a formal way of saying it and letting the listener know you did it if he/she doesn't already know.

However, "ringo wo tabemashita" (formal) and "ringo wo tabeta" (casual) roughly equal out to the same thing.
