How do you stop buffet going stale?

i am doing a chrsitening buffet which includes lots of sandwhiches and pastry is there any way of making it all the night before without the sandwhiches going stale and soggy

  1. Make you sandwiches but do not cut then, wrap them in greaseproof paper then an damp tea towel. Cut and plate in the morning. Pastries will be fine loosely wrapped in foil


  2. I'm sure there are some foods in your buffet that you could prepare the night before, but sandwiches are not one of them.  The bread will get soggy from whatever's inside....or even worse, it will taste stale.  An alternative would be to make a deli tray with meat and cheese (this you could do the night before) and then just put fresh bread or rolls in a basket next to the tray for people to make their own sandwiches.  Personally, I prefer to make my own anyway.   Good luck.

  4. put lettuce on your sandwiches to prevent the filling making the bread go soggy. Cover everything with foil.

  5. I have made cucumber & tomato tea sandwiches the night before.  I put them in tupperware containers, with a dry paper towel on the bottom and saran on top, with a well-wrung-out damp paper towel on top of that, and then the tupperware cover ........
