How do you stop fruit sinking when making a fruit cake?

I made a cherry and almond cake and all the cherries ended up at the bottom of the cake any advice on how to stop this happening again??Many thanks.

  1. Fold them in with the flour so that they all get coated on the way!


  2. Roll the fruits in flour before putting into the cake (or muffins)

  3. Roll the fruit in flour before adding to the rest of the mixture.

  4. One way my Grandmother used to do is to dust the fruit with flour before adding to the mixture.  I think this way could make the fruit end up with a gooey flour textured coating.

    As I like my fruit to be part of the cake, not a separate piece within it, I prefer, especially if using glace cherries, not to make the mixture too wet, as that will cause the fruit to sink.  The mixture needs to firm enough to suport the fruit.

  5. Wash and dry the fruit. I think you are making the mixture to runny to start with. Make a soft dropping consistency. I make loads of cakes every month, date and walnut, sultana and mixed spice, cherry and coconut. The fruit sinks also because you put too much sugar in the recipe. As it cooks the sugar melts and makes the mixture too runny and down goes the fruit. You could add an extra egg and this stiffens as it cooks. Have fun cooking, practice makes perfect.

  7. Not much you can do about it.  Dicing the fruit quite finely may help but it may spoil the texture of eating fruit.

People actually MAKE fruitcake?  And admit to it?!!  I'm just busting on you for the fun of it.  I like fruitcake.  Those other answers sound good, but make sure your batter isn't too thin.  If your recipe calls for rum, use the flavoring instead of real rum.  After it's done, pour on the liquor and wrap it in plastic.  But anything will sink in thin batter.

    Now I want some.  You're a horrible person.  

  9. Adding fruit to bread or cake, if you toss the fruit in flour first, they shouldn't sink to the bottom.
