Malibu is fine stored at room temperature.   Nothing NEEDS to be stored in a freezer but a lot of people like to store their vodka and tequilas in the freezer.

Keep at room temp or I even put mine in the freezer since alcohol doesn't freeze & will be nice and cold

My rule (which is completely unsubstantiated) is that if it is a clear liquid (i.e. vodka or clear tequila), put it in the freezer.  It if has color, leave it at room temp.  I wouldn't risk cold temps destroying the properties of a whiskey or carmeled rum.  As far as an expiration date is concerned...just drink it and that will solve that problem. :)
