  1. 2 tbsp corn starch = 1 egg

    2 tbsp arrowroot flour = 1 egg

    2 tbsp potato starch = 1 egg

    1 heaping tbsp soy powder + 2 tbsp water = 1 egg

    1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.

    1 banana = 1 egg in cakes.

  2. foodsubs.com is my main site for all substitutions, it rocks!

  3. They offer several options on the site below, but I usually use the first one listed for baking.  Banana might be good in brownies as well, although I've never tried that one.

  4. in your case id use 1 banana for each egg. You can also use 1/4 cup mayonnaise for each egg but the banana would be your best bet.

  5. I'm assuming you don't have the egg beaters either or you wouldn't be asking here.

2 Tbsp oil or butter (fat of some sort)

    2 Tbsp water

    for ever egg
