  1. crack it open and if its not green, your good to go :)

    or you could try what the first person said, probably better esp if you want to hard boil it or something! nothing worse than boiling an egg and getting you toast ready, waiting the 5 mins then cracking it open and its off!!!!!


  2. Here are a few ways to tell if eggs are fresh and how to store them ..... = )

    What should a fresh egg look like? When I crack an egg, I always look for a high-standing yolk surrounded by a firm egg white. Flat-looking yolks and a clear and somewhat shapeless white are signs of a "tired" egg. Ironically, a cloudy, less attractive white is an indicator of freshness! The cloudiness is just carbon dioxide contained in the white; as the egg ages, the carbon dioxide gradually escapes and the white becomes clearer.

    What about the old-school test? If my mother was uncertain of her eggs' freshness, she put them in a bowl of cold water. She would pluck out the ones that floated to the top and throw them out. Here's why: All eggs contain an air sac, and as an egg ages, the sac grows -- and the egg floats to the top. It works!

    What about that funny red spot? Occasionally, you may crack an egg and find a spot of blood. My local farmer explained that could happen if the hen is stressed for any reason while the egg is forming. Simply remove the spot with a spoon and enjoy the rest of the egg.

    Where's the best place to store eggs? Don't put eggs in the door of your fridge. Constant opening and closing makes door items most vulnerable to hotter temperatures. Store the eggs in their carton and toward the back of the fridge where it's coldest.

    Another reason to keep 'em in the carton: Surprisingly, an eggshell is porous and can absorb odors from other foods in your fridge. As my high school biology teacher put it, "Remember, an egg is a selectively permeable membrane...." So store foods with strong odors, such as blue cheese, in a completely different area of the fridge and make sure they are tightly wrapped.


  3. Place the egg, un-cracked, in the cup or bowl.

    Fill the cup or bowl with water, to at least half an inch above the level of the egg.

    This egg is still fairly fresh, staying almost completely horizontal in the water.

    Observe the egg's position. The older an egg is, the more it will float. A fresh egg will stay on its side at the bottom of the bowl. Eggs that stand on end, still touching the bottom of the bowl, are getting older, but still safe to eat if they have been properly refrigerated. Eggs that float off the bottom have gone bad and should be discarded.

    Fill a deep bowl or pan with enough cold tap water to cover an egg.

    Place the egg in the water.

    If the egg lies on its side on the bottom, the air cell within is small and it's very fresh.

    If the egg stands up and bobs on the bottom, the air cell is larger and it isn't quite as fresh.

    If the egg floats on the surface, it it should be discarded.

    A very fresh egg out of the shell will have an overall thick white which doesn't spread much and the yolk will stand up.

    Grade AA eggs are the highest grade available. They cost more than other grades, but may be a good choice because of their high quality and longer shelf life.

    Tips:

    Store eggs in the refrigerator small end down in their original carton.

    Eggs which are a week or so old are easier to peel than very fresh eggs when cooked in the shell

  5. fill bowl with room temperature water. If egg floats or is somewhere between floating and in the middle, it is not good. A good egg will sit at the bottom.
