  1. Hit it with a known weight object from a drop of the same height.

With a dead animal like a steers leg bone.

  2. Likely the brittleness of a chicken bone depends upon whether it is in a live or long dead chicken and whether the bone is wet or dried.  Chicken 'wishbones' are usually hung up to dry before people make a wish and break them.  Brittleness may depend upon too much or too little calcium (and other elements).  Strontium makes good bone.  Brittleness may depend upon whether you test the middle or end of the bone and how large the chicken was and which bone is tested.  In humans bone brittleness is estimated by X-ray (etc.) to check for porosity due to bone loss and density.  In humans, calcium is lost due to lack of exercise (a problem for astronauts and hospital patients).

You could perhaps check the brittleness of a chicken bone qualitatively by breaking the bone at its center and examining the break.  If it breaks across the bone like chalk it is likelier more brittle than a bone that breaks with stringy ends.
