  10. some sushi bar share the tip (server and chef) but some others don't and to be honest everybody work's so i suggest if the service is good split the tip between server and chef that way if they share they will put it together and if not, everybody get their part...but if you get a bad service from server or chef either way just tip the one ho is working for u

  11. 15-20% of the total, just like any other restaurant?  That's what I did last night.  And I left it on the table.
