Question:

How does White Chocolate become "white"?

My daughter asked me if you could dye chocolate pink, and i said no, because it starts out brown and it's too dark (even though now that I think about it, i think I have seen pink chocolate) then she said how do they make white chocolate then? I have no clue!

  1. When cacoa is processed it is seperated into cocoa powder and cocoa butter...from here they are mixed together in proper proportions to create dark and milk chocolate varieties. White chocolate on the other hand, is just cocoa butter, milk solids, sugar, vanilla flavor, lecithin and usually a few other preservatives or chemical additives. More expensive white chocolates have a higher percentage of cocoa butter than other brands...Cheaper brands have less cocoa butter but more of the other ingredients to create a flavor similar to expensive brands. Another thing to consider with white chocolate is the mouth feel...Higher quality brands do not immediately melt of your tongue instead they tend to coat your tongue...cheaper brands feel more waxy and take longer to melt.  you can add coloring to white chocolate but powdered or fat based colorings are the only acceptable types...


  2. It doesn't become white-it starts out that way. White chocolate contains no chocolate-it derives it's flavor from cocoa butter and milk solids.

    or 2) it gets the disease the michael jackson has!
