  1. A microwave oven passes (non-ionizing) microwave radiation (at a frequency near 2.45 GHz) through food, causing dielectric heating by absorption of energy in the water, fats and sugar contained in the food.

    Microwaves are electromagnetic waves with wavelengths ranging from 1 mm to 1 m, or frequencies between 300 MHz and 300 GHz.

  2. Microwaves interact with matter which has highly polarised covalent bonds.

    Water is a molecule with exactly such a bond-structure, so it can absorb the microwaves. This absorbed energy gives the molecules more kinetic energy - so they vibrate more: this is heat. So the water molecules vibrate and heat up, and some of this heat is transferred to neighbouring molecules, heating the whole food up.

    It is important to remember, however, that water is not the only molecule with polarised bonds. Proteins, for example also have polarised bonds. But water is [1] highly polarised, and [2] very common in just about all food substances. So, in general, it is the water in foods which cause it to heat up.

    it dosen't aplies heat directly in the food. it heats the water thats inside the food. when the water is hot the food remains cold. but then the heat is transmitted to the food. thats why it gets hot so quickly.it need not first heat the surface. and thats why food heated by micro wave r hotter inside and comparively less hot on the surface. and thats why the more amount of water there is in the food (the more wet the food is) the better it works.
