How does all that white popcorn stuff come out of a little yellow corn kernel?

  1. Popcorn kernels all have a small amount of moisture and oil in them.  When the moisture inside the kernel reaches the boiling point, it...EXPLODES!  This is because the outer hull is hard, It bursts open and and turns inside out with the white color you mentioned which occurs because of the release of the steam which increases the starch and protein contained inside.  The inside gelatinizes.  This is why, even if you buy the multi-colored kind that is red, blue, etc. it won't matter, because the inside of all kernels are the same.  The inside undergoes a chemical change which changes the color to white.


  2. There is moisture inside the kernal and when it is heated it turns into steam and explodes.
