How does booking a holiday online work?

Wanting to get a late deal to go to spain on september 1st. Because it's so close how would booking online work. How fast would the tickets come and is this website any good for booking:

I did my last holiday on expedia.com.  All worked out fine.  You have to pay by credit card straight away.

One hotel I had to cancel and they refunded into my account within a couple of days.

All went well and I had booked 5 hotels over a 5 week period.

It was kind of nice paying for it before I left as you get it at a good rate and when you are actually there you don't have to pay out anything other than shopping and food.
