I know that you can cook at the client's home, but what about if it is outside or in a facility with no kitchen?

  1. Either at home or at someplace with a kitchen and they transport the food there

  2. http://www.alfolo.com

  3. Can you prepare the food ahead of time?

  4. get food catered from an actual restaurant and they'll cook however much you think you will need for your guests in the restaurant's kitchen and bring it over.

  5. Grilling is the best. Go big for a large crowd. You can rent 6 ft grills. You'll need cover for the grill in bad weather & it can't be in the same tent with the guests. Also, renting gas ovens is another option.

  6. off site means it is delivered to your site.  it is cooked at the caterer's kitchen.  remember, caterers are inspected by the health department also.  i usually scored a clean 100 - it can be done !!  and usually, they have higher scores than a restaurant.  they know how to transportfood and set up  for the most part so that your food is delivered fresh and on time, set up how you want it or feasible for your situation and will not spoil for your party, or whatever.

depending on the situation, a caterer will bring tables and everything that is needed.  many will come back later or next day to pick up their things.

i used to be a director of catering.  good luck !!

  7. You can take a hot plate cooker along and cook with it a 2 burner or cook some where else and carry to where you want. or take a grill over and grill with it.

  8. Some items would be delivered hot and kept in chafing dishes.  A good caterer will also have some cooking stations with saute pans over portable gas burners.
