I recently saw an ad. for a food critics' hiring.  The ad requested writing samples for the all the applicants.

Food critics are usually hired by the publications that publish their reviews.  They get payed for their reviews and most often the publication also pays for the meals they review.  I would assume that most food critics are journalists, first and foremost.
