How does one make wasabi roe(tobiko, tobikko)?

I have been wondering for years how to make wasabi roe. Its the green colored fish eggs you see at the sushi resturants. None of the sushi chefs will tell me how to make it though...

  1. you cant make wasabi roe since its fish eggs.. you probably have to buy it at a grocery store.


  2. OK, disclaimer:  I have never actually done this, so it's just my semi-educated guess.  

    Take some natural (i.e., no flavor, no color) flying fish roe (what is its natural color?  I have seen only orange, green and black) and spread it in a single layer on a plate or sheet pan.  Put some wasabi powder in a small fine strainer and sprinkle it lightly over the roe.  Mix very gently.  

    If you want that spring green color, you're on your own.  I have no source for commercial food coloring.

    On a side note, I'm willing to bet that 99% of sushi chefs purchase their tobikko rather than make it.
