How does one prepare nori (dried seaweed) for use i know it can't be used as is it's too dry?

  1. You can use it in a variety of ways.  The easiest ways are to use in traditional sushi rolls. You lay the sheet of Nori flat on a bamboo mat, and spread rice across it, and add your desired filling in the middle. Leave a space at the top and bottom, so that when you roll the sushi, the sheet will be able to close.  Make sure you dunk your hands and knife in water with a little rice vinegar, this will keep it from sticking.  You can also use it like a wrap, instead of making the rolls.  Just lay the Nori flat add your rice and filling choices and fold it like a bowl.  I love to put avocado and cucumber, smoked salmon, or smoked tuna in a wrap for lunch.  Just remember that Nori sheets were originally made for convenience, and just go with what you like best.  Good Luck and Good Eats!

Everyone is right, and if it is to dry it will crumble, I am a former chef and I worked in Japan, that is why they pack those silica gel packets in the bags to remove moisture, you can toast it over a flame or electric burner, but once you have spread the rice on the nori and get the Maki sushi rolls ready to roll the nori has rehydrate enough to roll and not fall apart, I keep mine in a sealed ZipLok bag with 2 silica gels, and if it crumbles then put in a sealed smaller bag add some sesame seeds and other flavours, this is call funakake, Japanese seasoning for rice, like croutons or parmesan cheese to North Americans.

  3. The only thing I do with nori is make sushi.  You lay it flat on a bamboo mat and spread on cooked sushi rice and put the fillings of choice in the middle before rolling and slicing.
