How does "carrying my own bank" work, as a server?

I don't really get it. They told me I have to bring my own change for cash but how does that money get reimbursed to me at the end of my shift? I.e. if the check is $15 and they give me $20, I give them $5 back. When do I get my $5 back?

  1. You never actually give the five dollars away.  Your 'bank,' or 'change fund' stays the same.  You will always have the amount you start with, plus the amount you owe the restaurant.  

    Let's say you start your shift with $50.00.  Your table runs up a $15 tab and they pay with a $20 bill.  You take the $20 bill and give them $5.00 in change.  You now have $65 in your pocket (or apron). ($50 starting + $20 paid by customer - $5 given as change = $65).  You owe the restaurant the amount of the tab, which is $15.  Once you've paid the restaurant their share, you still have the $50 you started with.

    The formula is:

    + Beginning 'Bank'

    + Total cash received

    - Change returned to customers

    - Amount due to restaurant (Sales)

    = Beginning Bank
