How does sauerkraut mold look like?

I am making sauerkraut for the first time and i want to ferment it for 4 weeks (as suggested) but I'm not sure how the mold looks like. My water now is kind of the colour of fresh lemon juice and there were a few spots on the plate on the outside part. They were kind of yellowish-brownish and stuck on but a quick rinse of water got them off. What is this this stuff is it mold? How do I know the sauerkraut is ready to eat and how do I store it when its done? Thanks!

  1. i swear it doesnt mold. we had sauerkraut sitting in our fridge for about a year (after buying it "just to taste", desiding it was rank but keeping it simply because there was the possiblility someone would pipe up with "actually, i didnt mind it, i would like to taste it again, please") and it turned the same yellowy colour. eventually someone did have a go at it again (oblivious to it's antiquity) and apparently it tasted exactly as it should. so yea... i think it stays good for a while.


  2. I have made a lot of fermented things like kim chee etc Your Sauerkraut sounds like it's ready to can in jars. I'm jealous, it sounds like you've done everything right.
