If a recipe calls for a tablespoon of citric acid, how much crystalline vitamin c would be equivalent?

  1. if it is a recipe for a desert, try a tablespoon,... then adjust for taste

    if it is a recipe for canning, don't substitute. Ascorbic acid is about a 10X's weaker acid than Citric,  it does not follows that adding 10 x's the amount will get you to a safe pH to prevent food poisioning
