How does the buffet buisness work?

i mean, what gets you profit if there are people who can eat the more than their ticket in...just curious so when i become a chef i know how buisness works =]

Buffet works by offering very low quality food that you spend less money on than most restaurants.  Depending on the price of the buffet, they are among the lowest quality food available, usually about to expire/go bad soon.  There are some buffets that cost a lot of money ($50/person), in which they are expensive because it is a high quality choice of food.

We offer a buffet at our restaurant and it is not low quality. Yes some of the people eat their ticket but that is not all. We have less than 10 people a day who eat over their ticket in food. I would not recommend you serve lower quality food you want people to come back and that takes good food.
