How does the food at McDonalds stay fresh and hot during slow times like after midnight?

The prepared food is kept to a minimum, and in some cases, cooked to order.  If you ever eat there late at night, order something like a fish or chicken sandwich...or 20 nuggets.  They will usually tell you it will be 5 minutes (cook time)....because they don't keep perishables on hand that much at night.

They do keep burger patties and fries on hand however, not in such large numbers, but still there for quick processing.

They are kept in trays in a heated cabinet. The trays have tall sides, and just fit in the cabinet, so they are basically enclosed in heat until used. In really slow periods, food is cooked to order, which means they cook fresh meat and chicken and fries from frozen when you order it. This takes 3-4 minutes, but it ensures you get hot, fresh, food instead of food that's been sitting around for maybe an hour or more.

It isn't hot and fresh the way you want it!  Sandwich is assembled after you order it, fresh (made)

meat is kept in a heated compartment (140 deg.)  HOT!

They make a minimal amount of food and keep hot under heat lamps, every 10 minutes they throw it away and start fresh......they keep track of sales and then they judge what they usually sell on certain days at certain times and make that amount.....
