How easy is it, on a gap year, of securing work aboard before you go?

Im thinking of going on a gap year, though I will have to work to pay for it, and preferably, I would like to travel to as many as places as possible.

I was thinking that I could stay in n.america and australia for longer periods, to work, though, I have no idea where to start, would I have to pre-plan the work, and set dates I would work for early on?

Some suggestions for this:

Think of where you would like to go.  North America is comprised of three countries: Canada, US and Mexico.  Which country would you like to go to ? Pick one and then do some research on labour laws, wages and accomodations (amongst other issues).  I would advise the same for Australia.
