How easy is it for professional orchestras to mess up a performance?

Question

Like for the Sydney Symphony Orchestra, for example. How big was the chance that they would mess up in the 2000 Sydney Olympics that they had to mime (Assuming that they had to perform a piece that was made for the Olympics itself and not something that they would be familiar with)?
