How is a dinner for passover prepared? What are the foods to eat?

I hear everyone talk about passover dinners in Spain, what is it like? I alwsys like some of the things there.

.5.5 Kos Sheini (Second Cup of Wine)

6 Rachtzah (ritual washing of hands)

.7 Motzi Matzo (blessings over the matzo)

8 Maror (bitter herb)

.9 Koreich (sandwich)

.10 Shulchan Orech (the meal [literally, "set table"])

11 Tzafun (eating of the afikoman)

12 Bareich (Grace after Meals)

.12.1 Kos Shlishi (the Third Cup of Wine)

Answers don't get better than the first one, but before the Seder we usually clean out the Chametz in our homes.
