How is exactly proces production of gelatine ?

I know that gelatine is made of bones and skin. But how it is produced ? What chemical substations are added to make that ?

Is gelatine different chemical substation than that what it was before ?

It has different chemical qualities ?

  1. Gelatin is extracted from the animal tissue using acids, alkalies or enzymes.

    Chemically, it is formed by the partial hydrolysis of the native collagen found in the animal tissue (especially bones, skin and connective tissue).  Because it is smaller in size, it is more water soluble then the original compounds (scleroproteins).
