For fresh water you can go to the Arenal's volcano lagoon there you can find a kind of bass (love bass lol) and there are companies that will take you deep see fishing for Marlin, mahi mahi and more.

my husband has a boat in Herradura 5 miles from Jaco and he deep sea fish Mahi Mahi ,, rooster,, you name it he has a ball .. if you are planning to deep sea fish keep in contact and we have lots of friend that does tours .
