How is the sound quality of a good DVD player, as compared to a good CD player?

Suppose we compare a Harman Kardon DVD player to a Harman Kardon CD player.

If you are talking about playing a CD on a DVD player then I believe you will not be able to tell the difference.  I have been using DVD players as CD players for years and they sound pretty good!  I think they both are using roughly the same process to decode the audio.

If you are comparing DVD audio to CD audio, then both sound great!  

The answer is you can't go wrong with either one.
