  1. Your question is tough to answer because you didn't specify the kind of beans.  Harvested soybeans are received at processing plants much differently than fresh green snap beans, for example.  A load of soybeans will be received at the elevator by any farmer who grows them.  They will be weighed, moisture tested. the amount of foreign matter in the beans determined, and other quality matters determined.  This is done under the supervision of of the Federal Grain Inspection Agency to assure that the farmer gets a fair deal.  The weight will be adjusted according to the moisture percentage and the beans will be given a grade according to the quality of the beans. The farmer will be paid according to the grade given.

Green beans are a different matter. Processing plants accept beans only from contracted growers.  The beans are grown from planting to harvest under the supervision of the processing plant to assure that they receive the quality of beans that want for processing.

If you were a little clearer in your question as to type of beans  you want to know about you would get a better answer.

  2. Depends on your country. In the United States with United States grown product, the beans are inspected and given a grade. Like all products, buyers will offer a price for a product by it's grade, and prices are represented by the overall market. Beans in bean season cost less than beans that are available when the market is all imports.

If you have an early variety of bean (anything) and can get them to market while the price is high, you get more money. Less money if everyone brings them in all together; the price drops.

If you can grow a product when others can not (during a time when imports are usually bought) then you get more money because you have a fresh product and is local.

If you grow beans late in the season when others are getting ready to stop for cold weather, the price is going up and you might catch the market at a good time.
