  1. Use your meat thermometer and take the steak off the grill once it hits 120F-Rare, 125F-Med-Rare, 130 for Med. 140-Well Done.

Med. Rare is usually the most popular temperature to serve beef.  It should take about 3-4 min. per side.

It's good that you mastered cooking chicken already, most people usually struggle w/ Chicken.

Also, cover the steak with foil and let is rest on a warm plate for at least 5 min.  It helps the juices redistribute from the middle and the internal temp. will go up another 5 degrees during this time.

Check your therm.'s accuracy by testing it in a cup of ice water.  I forget what the temp should be (something like 22 degrees F)

Also, if your hand is burning over the grill, have a little bucket of water to dunk your hand in and you'll be able to keep your hand over the grill for longer.

  2. where do you grill your meat? on an out door grill over charcoal, a gas grill, in the kitchen in a cast iron grill pan or an electric grill.
