How long can I keep cut vegetables in the fridge and how should I store them?

I would like to keep cut onions, mushrooms, cucumbers, baby spinach, and maybe some other vegetables. I want to know the best way to keep them and how long they will last once they are already cut. Thanks!

  1. About a week if they are well hydrated. You can have carrots, celery, all colours of peppers and radish. The types that don't get mushy last longer.

    I keep celery in water. Carrots you can wet them every few days to add some hydration.

    Peppers just cut and store in tupperware. Same with mushrooms and cucumbers too. Some veggies last longer than others.


  2. Freeze them, or store them in iced water with some lemon juice added to stop discolouration..
