Question:

How long can meat chunks marinate in the fridge and still be good??

I had a BBQ Sunday night. I didn't use all the steak and chicken chunks for skewers. I forgot to freeze them and they have been in the fridge with and olive oil and citrus marinade since then.

Is it still okay to cook them tonight? Or would the meat have broken down by now and taste funky?

They were tightly sealed the whole time.

  1. Try it and taste it......if it smells ok it should be ok......cook it well.

Chicken usually goes 'mushy' within a few hours.  Tougher cuts of beef may stand up to marinating longer but citrus does break down the meat a lot quicker.  The beef really depends on the type...higher priced cuts such as tenderloin and t-bone really don't require a marinade.  A cut such as skirt or flank steak does.

  3. It should still be good,especially in a marinade. thawed meat is usually good for at least 4 days in frig.

  5. If they are steak cubes (beef), then they are fine.  Go ahead and use them.

  6. meat is good for like a month

    the reason why there are sauces is because a long time ago, the meat would start to smell, so they used sauces to cover up the smell

  7. I never trust meat that has been sitting in a marinade longer than overnight, especially when that marinade includes citrus.

    The meat will definitely have started to degrade and break down by now, so I would just be safe and throw them out.    

  8. Definately go ahead and use them - I have left meat in the fridge for 3 days like you did and still cooked it. You will be fine - just make sure it's well done.

  9. If they've been covered with the citrus marinade, they will be fine.  Marinades and spices help to preserve meats, especially acidic ones.  They may be falling apart, but they will not be "bad" or rotten.  They should last for a week or more in that marinade.
