  1. 2 days...  Place the cake in the refrigerator to defrost slowly..

When storing a cake for the 1st anniversary be sure to seal it well...  My mother did mine..  She froze the cake overnight covered in saran wrap, the next day she placed the frozen cake in a vacuum sealer bag and vacuum sealed it for long term storage...  She double sealed it one bag on top of the other for extra protection..  (Placing a none-frozen cake in a vacuum sealer can result in a flat smashed thing resembling a cake)...

The cake tasted ok although much of the boarder and decorative frosting flowers fell off during the defrosting process...

  2. Put it in the refrigerator for about 2-3 days before your anniversary. Then unwrap it and sit it on the counter about 2 hours before you're going to eat it.

Mine was wrapped in what seemed like an entire jumbo roll of saran wrap and placed in an airtight box. It tasted *almost* as good as it did the year before. I was suprised, because I figured it would be disgusting! 8) Happy anniversary!

  3. after our wedding, we wrapped our wedding cake in aluminum foil, and then put it in to a zip lock back and put it in the freezer. then the next year i took it out 2 days before our anniversary and put it in the fridge. it was completely thawed out on our anniversary and believe it or not, it tasted just as good as it had the year before!
