Question:

How long do I have to cook eggs so I don't burn them up?

Most of the time when I make omelets and scrambled eggs, they end up getting burned. Also, how high or low do I have to cook the eggs almost perfectly? Whoever answers both of my question will get the best answer!!

  2. When cooking omelets, the important thing is not time, but temperature.

    Heat your skillet to medium high, melting your butter, when you pour in your eggs, reduce heat to medium or slightly lower.

    Stir the eggs gently for the first 10 seconds or so, then quit stirring.  Gently swirl the eggs around the sides of the omelet skillet.  When the egg is almost set, add your fillings.  I generally use shredded cheese, mushrooms, and diced bell pepper.  Fold the omelet over and remove when the cheese starts melting.

    Generally, that results in a light brown but not crisp or burned crust on the omelet.

    One important thing, you will have best results if you use a skillet designed for omelets.  An omelet pan will have the side curving gently into the bottom of the pan with no distinct stop.

  4. The best way to make great scrambled eggs is to add some cream or milk then slowly cook them over a very low heat. It requires some patience and time but you will be very pleasantly rewarded.

  5. Medium to medium low for scrambled. I do mine on about 4 1/2. keep moving them until they're still a tad glossy. For omelets, start with room-temperature eggs or warmed in hot water and a slightly higher temp, maby 5 1/2. Omelets are easiest on a flat griddle with a long spatula.

    Sometimes I'm in a hurry and do a quick scram on about 6. Stir the dickens out of them and get them off as soon as all they're fairly solid. They'll finish cooking after they're plated as they cool.

  6. I usually cook them on medium low to medium for something between 4 to 5 minutes and they turn out great...

    Just make sure to "mix" them once in a while so they get burned up.
